Flammekueche. Flammekueche (), Flammkuchen (German lit. "flame cake") or tarte flambée is a speciality of the historic regions of Alsace, Saarland, Baden and Pfalz at the French-German border region. It is composed of bread dough rolled out very thinly in the shape of a rectangle or oval, which is covered with fromage blanc or crème fraîche, thin-sliced onions and lardons. Flammekueche is known as a plat du pauvre — a dish of the poor — traditionally made on bread-baking day, while the villagers waited for the heat of the communal oven to abate.
It may be only a few ingredients, but they are transformed into a truly delicious dish!
Flammekueche (flammeküeche, flammeküche, flammenkueche and flammenküche are also permitted by France's Le Robert dictionaries) is a traditional speciality of the Franco-German borderlands.

I am a vegan so I changed the cream to non-dairy sour cream.. Also known as tarte flambée, the flammekueche (pronounced flam-küsh*) can be described as the Alsatian pizza: a super thin round of dough topped with cream, finely sliced onions, bacon strips, and sometimes mushrooms (la forestière) and cheese (la gratinée), baked in a woodfire oven until the edges are golden brown and crisp. Just came upon this site while searching for a recipe for flammekueche, which I LOVE. Will be checking out the rest of the site too, as I love eating, living, travelling and writing as well! 😉 The only change I made to this recipe was to saute the onions a couple minutes in the bacon fat.
